Tempeh is a fermented soya bean product used as a protein in Vegan and Vegetarian cooking. The fermentation process results in natural probiotics agents whilst leaving desirable phytochemicals like soy isoflavones and most of the saponins intact. It is a complete protein, so contains all 9 of the essential amino acids. Consumed fresh, tempeh has a pleasant mushroom/nutty flavour but it readily absorbs flavours of other ingredients when used in recipes.
