Activated, vegan, gluten free falafel
This is a breakfast/snack pancake mix which has activated buckwheat and chickpeas and added super foods goji berry and maca. No sugar or sugar substitutes like xylitol. This is a truly healthy guilt free pancake and makes and excellent alternative to smoothies or porridge for vegans and people following a plant based lifestyle. These pancakes have subtle sweetness and unique flavour but may need toppings.
HOW TO MAKE PANCAKES
- Heat a non-stick pan to high heat. Add an oil. Coconut oil works really well.
- Mix ⅓ of a cup (80ml) of pancake mix with 100ml of cold water or plant milk. Mix very quickly.
- Immediately add to the pan pouring from the centre outwards.
- Cook for two minutes, turn down the heat if you need to, flip, then cook for another minute.
Crumpets: Use a little less nut milk/water. Drop tablespoons of mixture into heated coconut oil and cook as above.
